The Washed or Wet Process

The Natural or Dry Process

The Honey or Semi Washed Process
This method involves removing only the outer skin while allowing some or all of the sticky mucilage to remain on the bean during drying. The term honey refers to the sticky texture not the flavor. The result is a sweet smooth and often fruity cup making it appealing to buyers who want both richness and balance.
